What is a good camera for taking pictures of nature?

I want to be able to take pictures of wildlife and nature, but the camera I have doesn’t have a zoom feature, has poor focus, and ALWAYS gives the animals red-eye. Is there a camera that will make it easier to avoid / eliminate these problems and is under $500?
